9 Orchard Hotel
Situated below 9 Orchard Hotel, Corner Bar is Chef Ignacio Mattos’ trendy bistro that caters to celebrities and commonfolk alike; Henry was personally requested by Mattos to structure the entire place: train the entire team; direct overall service operations; and to oversee staff performance. What was the result? Outstanding food service to patrons.
LOUIS VUITTON x FREDS
In 2020, Barneys NY shutdown along with its beloved lunch bistro Freds. Come 2022, Louis Vuitton and Freds created groundbreaking partnership opening up a limited time restaurant with collaborations with incredible brands including BTS amongst others. Henry was tasked with hiring and establishing a top-notch menu that serviced high profile guests/celebrities.


TIA CARMEN
JW Marriot Resort & Spa-Phoenix
Birthed by Top Chef finalist, Angelo Sosa, Tia Carmen is a homage to his beloved aunt “Tia Carmen. Boasting southwest flavors, it embodies the desert landscape of Arizona and celebrates farming tradition. Sosa invited Henry to facilitate the opening at JW Marriot Hotel. Calling on his expertise in culinary flavors and service direction, Henry structured the vision we see here.
THE FRIARS CLUB
Curated for the entertainment industry, the friars club, is a Victorian style association that offers services to its exclusive members. As a consultant, Henry established a new service style: trained the staff; developed the renowned wine list; engaging with the likes of Samuel L. Jackson, Robert De Niro, and other big names in the industry.


432 PARK AVENUE RESTAURANT
Known as Billionaires playground, residents at 432 Park have exclusive access to its fine dining restaurant, famed for its incredible wine list. Responsible for menu development and spearheading all staff training, Henry laid the groundwork for much of the renowned service we see today.
